Unlike many tear-inducing onions, this sweet onion has very little pyruvate--the substance that stings your eyes--making meal-prep a breeze. Use it raw in salads, pico de gallo, or sandwiches, or add it to onion pie, pasta sauce, or roasts. The plants produce up to 6-inch bulbs that store well for about 2 months. Short-day onions need full sunlight and begin to produce bulbs when day length reaches 10 to 12 hours.
